Ingredients

½ cup Raw almonds

½ cup Chorizo sausage, finely minced

4 oz Goat cheese, crumbled

30 Medjool dates, pitted

10 Bacon slices

Directions

  1. Preheat your oven to 350°F. While the oven heats, pulse the raw almonds in a food processor until coarsely chopped. In a small bowl, combine the chopped almonds, minced chorizo, and crumbled goat cheese until well mixed.

  2. Carefully stuff each pitted date with approximately 1 teaspoon of the almond-chorizo-cheese mixture, filling the cavity where the pit was removed.

  3. Cut each bacon slice into 3 equal pieces. Wrap one piece of bacon around each stuffed date and secure with a toothpick, ensuring the bacon overlaps slightly.

  4. Arrange the wrapped dates on a wire rack set over a sheet pan, spacing them slightly apart to allow air circulation. This helps the bacon cook evenly and crisp on all sides.

  5. Bake for 30 minutes, until the bacon is crisp and golden brown and the filling is heated through. Remove from the oven and let cool for about 10 minutes before serving.

  6. Transfer the cooled dates to a serving platter and serve warm or at room temperature. Remove toothpicks just before eating if desired.
