1 onion, peeled and chopped
1 cup low-sodium canned tomatoes with juice
1/2 cup low-sodium tomato sauce
1/8 teaspoon garlic powder
1 teaspoon dried oregano
1/8 teaspoon black pepper
4 boneless, skin-removed chicken pieces (thighs, breasts, or legs), about 6-8 ounces total
Directions
Wash your hands thoroughly with soap and warm water before beginning food preparation.
Peel the onion under cold running water and chop it into medium-sized pieces.
Place the chopped onion in a medium saucepan and set over medium-low heat. Cook gently for about 1-2 minutes, stirring occasionally, until the onion becomes slightly softened.
Add the canned tomatoes with their juice, tomato sauce, garlic powder, oregano, and black pepper to the saucepan. Stir well to combine all ingredients.
Bring the mixture to a gentle simmer over low heat and let it cook for 3 minutes, stirring occasionally. This allows the flavors to meld together.
If any chicken pieces still have skin attached, carefully remove it with a sharp knife or paper towel for better grip. Pat the chicken pieces dry with paper towels.
Carefully place the skinless chicken pieces into the simmering tomato sauce, nestling them among the onions and tomatoes. Cover the saucepan with a lid.
Reduce heat to low and cook covered for approximately 1 hour, stirring gently every 15 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C) measured with a meat thermometer at the thickest part, and the flesh is tender and easily pulls away from any bones.
Remove from heat and let rest for 2-3 minutes. Taste and adjust seasonings if needed before serving.
