Ingredients

2 celery stalks, chopped into 2-inch pieces

1 inch piece fresh ginger root, peeled and chopped

1 organic golden beet, scrubbed and quartered

1 green apple, cored and chopped

2 large kale leaves, roughly chopped

1 lemon, quartered (peeled optional; unpeeled adds slight bitterness)

1 handful fresh spinach, loosely packed

Directions

  1. Rinse all produce under cool running water, scrubbing the beet and lemon gently with a clean brush to remove any dirt or debris. Pat dry with a clean kitchen towel.

  2. Peel the ginger root using a small knife or vegetable peeler. Cut the celery stalks into 2-inch pieces, quarter the beet, core and chop the green apple into pieces, roughly chop the kale leaves, cut the lemon into quarters (leaving skin on for more nutrients, though note it will add slight bitterness), and place spinach in a loose pile.

  3. Feed all prepared ingredients—celery, ginger, beet, green apple, kale, lemon, and spinach—through your juicer according to the manufacturer's instructions. Process until all produce has been completely juiced.

  4. Divide the fresh juice evenly between two glasses and add ice cubes. Serve immediately for maximum nutrition and flavor. Stir before drinking if any settling has occurred.
