  2. Add the shrimp to the hot skillet and season with half of the salt and pepper. Cook for 2-3 minutes per side until the shrimp are opaque and reach an internal temperature of 145°F. Transfer the cooked shrimp to a plate.

  3. Add the corn kernels to the skillet and cook for 2 minutes, stirring occasionally, until lightly warmed through.

  4. Add the cherry tomatoes to the skillet and cook for 2-3 minutes, stirring gently, until the tomatoes begin to soften and burst slightly.

  5. Pour the heavy cream into the skillet and stir to combine with the vegetables. Season with the remaining salt and pepper. Simmer for 1-2 minutes until the sauce is heated through.

  6. Return the cooked shrimp and crispy pancetta to the skillet and gently fold to combine with the sauce. Heat for 1 minute to warm through.
