Ingredients

1 cup roasted cashews

1 cup (about 8 ounces) pitted dried dates

1/2 cup dried blueberries

2 tablespoons raw honey

3/4 teaspoon sea salt

1/2 cup unsweetened shredded coconut, plus additional for coating

Directions

  1. Place the cashews, pitted dates, shredded coconut, raw honey, and sea salt into a food processor. Pulse and process until the mixture is well combined and holds together when squeezed gently with your fingers—it should resemble coarse crumbs.

  2. Add the dried blueberries and pulse a few times until they are evenly distributed throughout the mixture without breaking them into tiny pieces.

  3. Using a small ice cream scoop or teaspoon, portion out the mixture and roll each portion between your palms into a compact ball about the size of a quarter. Gently press and reshape as needed to ensure it holds together.

  4. If desired, roll each ball in additional unsweetened shredded coconut until lightly coated. Place the finished bites in a sealable container and store at room temperature for up to 2 weeks.
