Ingredients
1 cup roasted cashews
1 cup (about 8 ounces) pitted dried dates
1/2 cup dried blueberries
2 tablespoons raw honey
3/4 teaspoon sea salt
1/2 cup unsweetened shredded coconut, plus additional for coating
Directions
Place the cashews, pitted dates, shredded coconut, raw honey, and sea salt into a food processor. Pulse and process until the mixture is well combined and holds together when squeezed gently with your fingers—it should resemble coarse crumbs.
Add the dried blueberries and pulse a few times until they are evenly distributed throughout the mixture without breaking them into tiny pieces.
Using a small ice cream scoop or teaspoon, portion out the mixture and roll each portion between your palms into a compact ball about the size of a quarter. Gently press and reshape as needed to ensure it holds together.
If desired, roll each ball in additional unsweetened shredded coconut until lightly coated. Place the finished bites in a sealable container and store at room temperature for up to 2 weeks.
