1½ pounds small redskin potatoes
water
¾ cup dry white wine
4 cloves medium garlic cloves, peeled and left whole
2 tablespoons fine sea salt
2 tablespoons sweet Hungarian paprika
1 tablespoon garlic powder
1 tablespoon coarsely ground black pepper
1½ teaspoons cayenne pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon onion powder
½ teaspoon dried thyme leaves
½ teaspoon celery seed
4 tablespoons butter
¼ cup thinly sliced green onions
Directions
Prepare the Cajun seasoning blend by combining the fine sea salt, Hungarian paprika, garlic powder, coarsely ground black pepper, 1 teaspoon cayenne pepper, dried basil, dried oregano, onion powder, dried thyme, and celery seed in a small bowl. Mix well and set aside.
Rinse the redskin potatoes and cut any larger ones in half so they are all roughly the same small size for even cooking.
In a large pot, combine the potatoes, whole garlic cloves, and enough water to cover them by about 1 inch. Bring to a boil over high heat.
Reduce heat to medium and simmer the potatoes until they are fork-tender, about 15 to 20 minutes.
While the potatoes cook, measure out 2 tablespoons plus 2 teaspoons of the prepared Cajun seasoning and set aside with the remaining 1/2 teaspoon cayenne pepper.
When the potatoes are tender, drain them thoroughly in a colander, reserving the cooked garlic cloves.
Return the drained potatoes and reserved garlic cloves to the pot and add the white wine. Mash with a potato masher to your desired consistency, leaving some small pieces for texture if preferred.
Stir in the 2 tablespoons plus 2 teaspoons of Cajun seasoning and the 1/2 teaspoon cayenne pepper, mixing well to distribute the spices evenly.
Add the butter and fold in gently until completely incorporated and the potatoes are creamy.
Fold in most of the sliced green onions, reserving some for garnish.
Transfer the smashed potatoes to a serving dish and top with the remaining fresh green onions. Serve hot.
