2 tablespoons chia seeds
¼ cup coconut oil
¼ cup honey
1 lemon, zested
¼ cup light brown sugar, packed
½ cup puffed millet
2½ cups rolled oats
1 generous pinch sea salt
2 bags Earl Grey tea
¼ cup unsweetened shredded coconut
¼ cup white chocolate chips, divided
Directions
Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper, allowing the edges to overhang slightly for easy removal.
Spread the rolled oats and puffed millet in an even layer on a rimmed baking sheet.
Toast in the oven for 8-10 minutes, stirring occasionally, until fragrant and lightly golden.
Remove the toasted oat mixture from the oven and transfer to a large mixing bowl. Open the Earl Grey tea bags and discard the paper, adding the loose tea leaves to the bowl. Stir in the chia seeds, shredded coconut, lemon zest, and sea salt until well combined. Add half of the white chocolate chips and mix gently.
In a saucepan over medium heat, combine the coconut oil, brown sugar, and honey. Stir frequently for 2-3 minutes until the ingredients are melted and fully combined.
Pour the warm honey-oil mixture over the oat mixture and stir thoroughly until every component is evenly coated.
Transfer the granola mixture to the prepared baking pan and press down firmly and evenly with a spatula or the back of a spoon. Sprinkle the remaining white chocolate chips over the top, pressing them in gently.
Refrigerate for about 2 hours until completely set, or place in the freezer for 30 minutes for faster setting. Using the parchment paper edges, lift the entire block from the pan and remove the paper. Using a serrated knife, carefully cut into 12 even bars. Store in an airtight container.
