Ingredients

3 egg yolks, beaten

2⅔ cups heavy cream

⅓ cup semisweet chocolate chips

⅓ cup unsweetened cocoa powder

⅔ cup white sugar

Directions

  1. In a large bowl, whisk together the white sugar and unsweetened cocoa powder until completely combined with no lumps remaining.

  2. Add the beaten egg yolks to the sugar and cocoa mixture. Using an electric mixer, blend on medium speed for 2–3 minutes until the mixture is smooth, pale, and well combined.

  3. Pour the heavy cream into the mixture and continue beating with the electric mixer until soft peaks form and the mixture is light and fluffy, about 3–4 minutes.

  4. Gently fold in the semisweet chocolate chips by hand using a spatula until evenly distributed throughout the custard.

  5. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions, approximately 30–40 minutes, until the ice cream reaches a soft-serve consistency.

  6. Transfer to a freezer-safe container and freeze for at least 2 hours before serving, or until the desired firmness is reached.
