¼ cup orange juice

2 tablespoons white wine vinegar

2 tablespoons onion, finely chopped

¼ teaspoon salt

1 dash black pepper

1 tablespoon vegetable oil

2 teaspoons Dijon mustard

4 cups salad greens, torn

2 cups cooked turkey breast

1 cup mandarin orange sections, drained

½ cup celery, chopped

Directions

  1. Wash your hands thoroughly with soap and clean water before preparing the salad.

  2. In a jar with a tight-fitting lid, combine the orange juice, white wine vinegar, finely chopped onion, salt, black pepper, vegetable oil, and Dijon mustard. Seal the lid and shake vigorously for 30 seconds until the vinaigrette is well blended and emulsified.

  3. If you do not have a jar with a tight-fitting lid, place all vinaigrette ingredients in a small mixing bowl and whisk together until fully combined and smooth.

  4. In a large bowl, combine the torn salad greens, cooked turkey breast, drained mandarin orange sections, and chopped celery. Toss gently with your hands or two forks until all ingredients are evenly distributed.

  5. Drizzle the orange vinaigrette over the salad and toss lightly to coat. Serve immediately on individual plates.
