1 tbsp Lemon juice

pinch Salt

4 tbsp Extra virgin olive oil

small bunch Fresh chives, finely chopped

200 g Mixed salad leaves

2 Ripe avocados, sliced

Directions

  1. Pour the lemon juice into a jar with a tight-fitting lid. Add a pinch of salt.

  2. Pour the olive oil into the jar with the lemon juice and salt.

  3. Add the finely chopped fresh chives to the jar.

  4. Close the lid securely and shake vigorously for 30 seconds until the vinaigrette is well combined and emulsified.

  5. Place the mixed salad leaves in a large bowl. Arrange the sliced avocados on top of the greens.

  6. Drizzle the lemon-herb vinaigrette over the salad and gently toss until all ingredients are evenly coated. Serve immediately.
