¼ cup Kosher salt
2 tablespoons Brown sugar
2 tablespoons Smoked paprika
1 tablespoon Granulated garlic
1 tablespoon Dried rubbed sage
1 tablespoon Dried thyme leaves
2 teaspoons Black pepper
¾ teaspoon Cayenne pepper (optional)
Directions
Pour the kosher salt into a small bowl or mortar. If the salt crystals are large, crush them slightly with the back of a spoon to break them into smaller, more uniform pieces.
Add the brown sugar to the salt and stir well to combine. Break up any clumps of sugar by pressing them against the side of the bowl with the back of a spoon.
Stir in the smoked paprika, ensuring it is evenly distributed throughout the mixture with no streaks of color remaining.
Add the granulated garlic, dried rubbed sage, and dried thyme leaves. Mix thoroughly until all herbs are evenly incorporated throughout the blend.
Sprinkle in the black pepper and stir until the spice is uniformly distributed. Taste a pinch of the mixture if desired to check the balance of flavors.
If using cayenne pepper for added heat, add it now and stir until completely combined. Adjust the amount based on your preferred level of spiciness.
Transfer the finished seasoning blend to an airtight glass jar or container. Label it with the date and contents, then store in a cool, dark place for up to three months.
