Ingredients
3 tablespoons unsalted butter, divided
8 slices (1-inch-thick) French bread
4 large eggs
1/4 cup whole milk
1 tablespoon fresh chives, chopped
1/8 teaspoon fresh black pepper
3/4 cup mashed avocado
1 cup diced fresh tomatoes
Directions
Preheat your oven to 400°F. Melt 2 tablespoons of butter and generously brush both cut sides of each bread slice. Place the bread slices on a baking sheet and bake for 5 minutes. Flip each slice and continue baking for another 3 to 5 minutes until golden and crispy.
Remove the toasted bread from the oven and set aside to cool slightly. In a medium mixing bowl, whisk together the eggs, milk, chopped chives, and black pepper until well combined.
Place a medium nonstick sauté pan over medium-low heat.
Add the remaining 1 tablespoon of butter to the hot pan. Once the butter has melted, pour in the egg mixture. Cook, stirring occasionally, until the eggs reach your desired doneness (about 3 to 5 minutes for soft, creamy scrambled eggs).
Spread an equal portion of mashed avocado on the top of each toasted bread slice. Distribute the warm scrambled eggs evenly over the avocado layer, then finish with a generous garnish of diced fresh tomatoes. Serve immediately.
Comments
This is a straightforward egg-and-toast dish with avocado and tomato, all available at any Charlotte grocery chain without a special trip. The cost lands around $2.50–$3.00 per serving depending on avocado and tomato prices, which is fair for a sit-down breakfast. The twenty-minute time is honest if you're cooking four portions at once, though you'll need to work the stovetop steadily and toast the bread efficiently—not a hands-off meal. The real caveat is that bruschetta doesn't reheat well; it's a same-night dish best eaten immediately after plating, which limits leftovers for a busy weeknight.
