2 cups fresh basil

4 cups fresh spinach

1/4 cup grated Parmesan cheese

2 cloves garlic

1 tablespoon fresh lemon juice

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/3 cup plus 1 tablespoon extra virgin olive oil

Directions

  1. Add the fresh basil, spinach, grated Parmesan cheese, garlic cloves, lemon juice, kosher salt, and black pepper to the bowl of a food processor or blender.

  2. Blend the mixture for about 30 seconds, pausing to scrape down the sides and bottom of the bowl with a spatula to ensure all ingredients are evenly combined.

  3. With the food processor or blender running on low speed, slowly drizzle in the olive oil in a thin, steady stream. Continue processing until the pesto reaches a smooth, creamy consistency.

  4. Pulse once or twice more if needed to achieve your desired texture. Transfer to a serving bowl or container and use immediately, or refrigerate for later.
