Ingredients

1 tablespoon vegetable oil

2 thin slices ginger root, minced

1 garlic clove, peeled and minced

16 ounces cooked turkey, cut into 1/2 inch cubes

2 packages (10 ounces each) frozen mixed vegetables, chopped

1/2 teaspoon salt

1/2 teaspoon sugar

1 to 2 tablespoons water, if needed

1 tablespoon cornstarch (for optional gravy)

2 teaspoons low-sodium soy sauce (for optional gravy)

1/2 cup low-sodium chicken stock (for optional gravy)

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Heat the vegetable oil in a large frying pan or wok over high heat until it shimmers, about 1 minute.

  3. Add the minced ginger and garlic to the hot oil and stir for about 15 seconds until fragrant.

  4. Add the cooked turkey cubes and frozen mixed vegetables to the pan and stir constantly for about 1 minute to coat everything with oil and distribute the heat evenly.

  5. Sprinkle the salt over the mixture and continue stirring. Reduce the heat to medium-high to prevent the mixture from scorching while allowing it to cook through.

  6. Add the sugar and stir to combine.

  7. Check the vegetables for tenderness by piercing a piece with a fork. If they are already soft and tender, remove the pan from heat and proceed to serving.

  8. If the vegetables are still firm, add 1 to 2 tablespoons of water to the pan, cover with a lid, and cook for about 2 minutes until the vegetables reach your desired tenderness.

  9. For the optional gravy: whisk together the cornstarch, soy sauce, and chicken stock in a small bowl until smooth and well combined.

  10. Pour the gravy mixture over the turkey and vegetables in the pan and stir constantly for about 30 seconds until the sauce thickens and coats everything evenly.

  11. Transfer to a serving dish and serve immediately while hot.
