Ingredients

3 stalks Lemongrass stalks

6 bags Mint tea bags

¼ cup Honey

4 cups Water

Ice cubes

Fresh lemongrass stalks for garnish (optional)

Directions

  1. Rinse the 3 lemongrass stalks under cool water and trim away the dry, papery outer layers. Cut the stalks into 2-inch pieces and lightly crush them with the side of a knife to release their aromatic oils.

  2. Bring 4 cups of water to a boil in a saucepan. Add the crushed lemongrass pieces and remove from heat.

  3. Add the 6 mint tea bags to the hot lemongrass water and let steep for 8–10 minutes to allow the flavors to fully infuse.

  4. Strain the tea through a fine-mesh sieve into a pitcher, discarding the lemongrass pieces and tea bags.

  5. Stir in the 1/4 cup honey until completely dissolved.

  6. Refrigerate the tea for at least 5 hours or until thoroughly chilled.

  7. Fill glasses with ice cubes and pour the chilled lemongrass-mint tea over the ice. Garnish with fresh lemongrass stalks if desired and serve immediately.
