Ingredients

1 cup Honey roasted vanilla almonds

20 Medjool dates, pitted

2 tablespoons Cocoa powder

1 tablespoon Water

Directions

  1. Add the honey roasted vanilla almonds to a food processor and pulse until they are coarsely chopped. Transfer to a small bowl and set aside.

  2. Place the pitted medjool dates in the food processor and pulse until they are coarsely chopped.

  3. Add the cocoa powder and water to the food processor with the dates. Pulse until the mixture resembles moist cookie dough, with no dry cocoa powder remaining.

  4. Add the reserved chopped almonds to the food processor and pulse until the ingredients are evenly combined throughout the mixture.

  5. Transfer the mixture to a large bowl. Knead the dough with your hands until it comes together into a cohesive, uniform mass.

  6. Lay a piece of parchment paper on your work surface. Press and roll the dough onto the parchment into a slab approximately 1/3 inch thick.

  7. Using a sharp knife, cut the slab into 8 to 10 equal squares. Serve immediately or store in an airtight container.

This no-bake almond-date brownie is cheap and genuinely quick—five minutes is honest if your dates are already pitted—and the ingredients (almonds, dates, cocoa powder) are available at any Charlotte grocer including ALDI and Walmart. The real cost driver is almonds, which run $8–$12 per pound; you'll need about half a cup for eight servings, adding roughly $1.50 per serving, but dates and cocoa are negligible. The texture lands somewhere between fudgy and dense rather than cakey, and it holds well in the fridge for three days, making it solid for meal prep or lunchbox packing. One caveat: if your almonds aren't natural or roasted unflavored, or if you grab sweetened dates by accident, you lose the "guilt-free" claim fast.
