Ingredients

1/2 cantaloupe melon, seeded and cut into bite-sized cubes

2 nectarines, pitted and sliced into wedges

50 grams goat cheese, crumbled into small pieces

12 cherry tomatoes, halved

6 leaves fresh mint, roughly torn

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and freshly ground black pepper to taste

Directions

  1. Prepare the melon by cutting it in half lengthwise, scooping out the seeds with a spoon, then cutting the flesh into bite-sized cubes. Place the cubes in a large serving bowl.

  2. Rinse the nectarines and pat dry. Cut around the pit to remove it, then slice the fruit into wedges. Add to the bowl with the melon.

  3. Halve the cherry tomatoes lengthwise and add them to the bowl.

  4. Gently crumble the goat cheese into small, irregular pieces and scatter over the fruit and tomatoes.

  5. Tear the fresh mint leaves by hand and distribute them throughout the salad.

  6. In a small bowl, whisk together the olive oil and balsamic vinegar until combined. Season the dressing with salt and pepper to taste.

  7. Drizzle the dressing over the salad just before serving and gently toss to combine, being careful not to break up the goat cheese or fruit too much. Serve immediately.
