Ingredients
1 pork tenderloin (1½ pounds)
3 tablespoons instant espresso powder
1 tablespoon plus 1 teaspoon brown sugar
1 teaspoon sweet paprika
1 teaspoon smoked paprika
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil, divided
1 tablespoon butter
Directions
Preheat your oven to 400°F. In a small bowl, whisk together the instant espresso powder, brown sugar, sweet paprika, smoked paprika, kosher salt, and black pepper until well combined.
Pat the pork tenderloin dry with paper towels. Rub the entire surface of the meat evenly with the espresso spice mixture, pressing gently so the coating adheres well.
Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat until shimmering. Once hot, carefully place the coated pork tenderloin in the skillet.
Sear the pork for 3-4 minutes until the bottom develops a golden-brown crust, then flip and sear the other side for another 3-4 minutes. Add the butter to the pan.
Transfer the skillet to the preheated 400°F oven and roast for 12-15 minutes, until the internal temperature of the pork reaches 145°F when measured at the thickest point with an instant-read thermometer.
Remove the tenderloin from the oven and allow it to rest on a cutting board for 5 minutes before slicing. This helps the juices redistribute throughout the meat.
Slice the pork tenderloin into ¾-inch thick slices and serve immediately with the pan drippings spooned over top if desired.
Comments
Every ingredient is a staple at any Charlotte grocer—even espresso powder sits on most baking aisles at Harris Teeter, Food Lion, and Kroger—so no special trips required. At roughly $10–12 for a 1.5-pound tenderloin plus pocket change for pantry items, you're looking at $2.50–3 per serving, which is solid for a weeknight protein. The stated 40 minutes is honest for searing and oven time, though you'll need 10 minutes for the crust to rest on the meat before cutting. It's an elegant dish that hands off to the oven midway, making it genuinely family-friendly for a weeknight, though the cut doesn't reheat brilliantly—leftovers work cold but lose some appeal compared to fresh.
