Homemade Cranberry Syrup

Ingredients
1 cup sugar
1 cup water
2 cups fresh cranberries, roughly chopped
Directions
In a medium saucepan, combine the sugar and water. Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar dissolves completely, about 2 minutes.
Add the chopped cranberries to the boiling syrup. Stir well to combine and return to a boil.
Reduce the heat to medium and simmer, stirring occasionally, for 15–20 minutes until most of the cranberries burst and the mixture thickens into a syrup consistency. The berries should break down and the liquid should reduce by about half.
Remove from heat and let cool slightly. If a smoother syrup is desired, strain through a fine-mesh sieve, pressing gently on the berries to release all the syrup. If you prefer a chunkier texture, skip this step.
Transfer to a clean glass jar or container and cool completely to room temperature. The syrup will continue to thicken as it cools. Store in the refrigerator for up to 3 weeks.
