A classic Jewish comfort dish made from matzah, eggs, and butter. The matzah is softened in hot water, then mixed with beaten eggs and pan-fried until golden and crispy on the outside. Serve warm with your choice of toppings for a satisfying breakfast, brunch, or light main course.

Ingredients
2 sheets of matzah, broken into 4cm pieces
2 large eggs
½ teaspoon salt
1 tablespoon butter
150ml hot water
Directions
Break the matzah sheets into 4cm pieces and place them in a large flat bowl or tray. Pour 150ml of hot water over the pieces, ensuring all matzah is evenly submerged. Let it soak for about 1 minute until the matzah becomes soft and slightly puffy but still holds its shape. Drain off any excess water by carefully pouring it out.
In a large bowl, beat the eggs together with the salt until well combined. Add the soaked matzah pieces to the egg mixture and stir gently until all the matzah is coated and distributed evenly throughout.
Heat the butter in a 25cm frying pan over medium heat until it foams. Pour the entire egg and matzah mixture into the pan and spread it into an even layer. Allow it to cook undisturbed for 4-5 minutes until the bottom is golden brown and set.
Using a spatula, carefully flip the matzah brei over in one piece or break it into smaller patties before flipping. Cook the other side for another 4-5 minutes until golden brown and cooked through. Serve immediately with your choice of toppings.
