2 limes juice of 2 limes

1 orange juice of 1 orange

¼ cup fresh minced cilantro

1 large shallot, chopped

2 tsp dried oregano

½ tsp ground coriander

¼ tsp ground cumin

1 tsp red pepper flakes

2 tsp sea salt

1 tsp coconut sugar (optional)

¼ cup filtered water

Directions

  1. Rinse the chuck roast under cold running water and pat it completely dry with paper towels. Allow it to rest on the counter for 30 minutes to reach room temperature.

  2. While the meat rests, combine the olive oil, minced garlic, lime juice, orange juice, cilantro, chopped shallot, oregano, ground coriander, ground cumin, red pepper flakes, sea salt, and coconut sugar (if using) in a food processor. Pulse until the mixture becomes a coarse, well-combined marinade.

  3. Place the room-temperature chuck roast in your crock pot and generously coat all sides with the prepared marinade, ensuring the meat is well rubbed with the seasoning mixture.
