Ham and Pimiento Grilled Cheese

A delicious grilled cheese sandwich loaded with sharp Cheddar, creamy cream cheese, sliced deli ham, and bright pimientos with a kick of hot sauce. Two slices of golden bread are toasted until crispy on the outside while remaining warm and cheesy on the inside. Perfect for a quick lunch or casual dinner.

Ingredients
4 slices country or Pullman bread
1 tablespoon unsalted butter
4 ounces sharp Cheddar cheese, sliced
2 tablespoons cream cheese, softened
1 teaspoon hot sauce
2 slices deli ham
¼ cup sliced pimientos
2 scallions, chopped
Directions
Lay out all four bread slices. Spread half of the softened cream cheese on the inner side of two bread slices, then spread the hot sauce over the cream cheese on each.
Layer half of the sliced Cheddar cheese on each cream cheese-spread slice, then distribute the deli ham evenly between the two sandwiches, placing it on top of the cheese.
Divide the sliced pimientos between the two sandwiches, spreading them over the ham. Top each sandwich with the remaining sliced Cheddar cheese and the chopped scallions.
Place the remaining two bread slices on top of each sandwich to close them. Gently press down on the tops.
Heat a large skillet or griddle over medium heat. Melt half of the butter in the pan.
Once the butter is foaming, carefully transfer both sandwiches to the skillet and cook for 3 to 4 minutes until the bread is golden brown and crispy on the bottom.
Flip the sandwiches, add the remaining butter to the pan, and cook the other side for another 3 to 4 minutes until golden brown and the cheese is fully melted inside.
Transfer the finished sandwiches to a plate and serve immediately while warm.
