Ingredients

3/4 cup breadcrumbs

1/4 cup light mayonnaise

1 egg, slightly beaten

1/2 teaspoon lemon pepper seasoning

7 ounces frozen salmon, thawed and drained, skin removed and finely chopped

Directions

  1. In a medium bowl, combine the breadcrumbs, light mayonnaise, beaten egg, and lemon pepper seasoning. Mix until the dry and wet ingredients are evenly incorporated.

  2. Gently fold the chopped salmon into the breadcrumb mixture, stirring until well combined. Do not overmix, as this can break apart the salmon pieces.

  3. Measure 1/3 cup of the salmon mixture and firmly pack it into a round patty shape about 1 inch thick. Place on a clean surface or plate.

  4. Repeat with the remaining mixture to form a total of five patties.

  5. Lightly coat a skillet with cooking spray and place it over medium heat. Allow the skillet to warm for about 1 minute.

  6. Carefully transfer the salmon patties to the hot skillet. Cook for 5–7 minutes until the bottoms are light brown and set.

  7. Using a spatula, gently flip each patty and cook the other side for 5–7 minutes until the exterior is golden brown.

  8. Check that the internal temperature reaches 160°F using a food thermometer inserted into the thickest part of a patty. This ensures the egg binder is cooked through and the salmon is fully heated. Serve warm.
