1 large ripe avocado
1 cup honeydew melon chunks
1½ teaspoons fresh lime juice
1 cup fat-free milk
1 cup plain fat-free yogurt
½ cup 100% apple juice or white grape juice
1 tablespoon honey
Directions
Cut the avocado in half lengthwise around the pit. Twist the halves apart and carefully remove the pit using a spoon or your hand.
Using a spoon, scoop the avocado flesh away from the skin and place it directly into a blender.
Add the honeydew melon chunks, lime juice, fat-free milk, plain yogurt, apple or white grape juice, and honey to the blender.
Blend on high speed for 30 to 45 seconds until the mixture is completely smooth and creamy. Stop and scrape down the sides if needed, then blend again briefly if necessary.
Pour the smoothie into two glasses and serve immediately. For a colder drink, serve over ice if desired.
If you prepare this smoothie ahead of time, cover and refrigerate for up to 24 hours. Before serving, give it a gentle stir to recombine any separated ingredients, then pour into glasses.
