Ingredients
1 stalk lemongrass, outer leaves discarded, bottom 3 inches finely minced
1 inch piece fresh ginger, finely minced
2 garlic cloves, finely minced
1 green onion, finely minced
2 tablespoons cooking oil
1/2 teaspoon salt
Freshly ground black pepper to taste
1 pound shell-on shrimp
Cooking oil, for brushing grill grates
Lime wedges, for serving
Directions
In a small bowl, combine the minced lemongrass, ginger, garlic, green onion, and 2 tablespoons of cooking oil. Season with salt and black pepper to taste, stirring until well blended into a fragrant paste.
Pat the shrimp dry with paper towels. Place them in a large bowl and add the lemongrass-ginger paste, tossing gently but thoroughly to coat all the shrimp evenly. Let marinate for 15 to 20 minutes at room temperature.
Preheat your grill to medium-high heat (about 400°F). Lightly brush the grill grates with cooking oil to prevent sticking.
Arrange the marinated shrimp in a single layer on the hot grill grates. Cook for 2 to 3 minutes per side, until the shrimp are opaque throughout and reach an internal temperature of 145°F. The shells should show light char marks.
Transfer the grilled shrimp to a serving platter and serve immediately with lime wedges on the side for squeezing over the shrimp.
