Ingredients

4 bone-in pork loin chops, 1/2-inch thick

¼ tsp salt

¾ tsp jerk seasoning

1 tbsp vegetable oil

1 can canned pineapple chunks in juice

3 scallions, sliced

1 tsp salt

Directions

  1. Pat the pork chops dry with paper towels. In a small bowl, combine 1/4 teaspoon salt and 3/4 teaspoon jerk seasoning. Rub the seasoning mixture evenly over both sides of all four chops.

  2. Heat the vegetable oil in a large skillet over medium-high heat until shimmering, about 1 minute.

  3. Place the seasoned pork chops in the hot skillet and cook for 5 to 6 minutes per side until the internal temperature reaches 145°F. Transfer the cooked chops to a serving plate and tent with foil to keep warm.

  4. In the same skillet, add the canned pineapple chunks with their juice. Stir gently and heat through for 1 to 2 minutes.

  5. Taste the pineapple mixture and add the 1 teaspoon of salt as needed. Spoon the warm pineapple and its juices over the pork chops.

  6. Garnish with sliced scallions and serve immediately.

Jerk seasoning is the hinge here: most Charlotte grocers stock it (Harris Teeter and Kroger carry it reliably), though ALDI and Food Lion are less consistent, so a quick call ahead saves a detour. Pork chops and pineapple are year-round basics, and scallions are standard everywhere, making this genuinely low-friction on the shopping trip. The stated 25 minutes is honest for pan-searing chops and caramelizing pineapple, though chopping scallions and measuring seasoning could stretch prep another 3–5 minutes if you're starting from scratch. This is a weeknight win for a family: minimal active time at the stove, forgiving on doneness, and a natural one-pan meal that reheats decently the next day as a cold lunch or quick reheat.
