Ingredients

1 ripe mango, peeled and chopped

1/4 cup green bell pepper, diced small

1 green onion, chopped

2 tablespoons fresh lime juice

Directions

  1. Wash your hands thoroughly with soap and water before beginning preparation.

  2. Select a ripe mango and carefully peel away the skin. Slice the flesh away from the large central pit, being careful to remove all of the seed. Chop the mango into small, bite-sized pieces and transfer to a medium mixing bowl.

  3. Rinse the green bell pepper and remove the stem and seeds. Cut the pepper into small, uniform dice.

  4. Rinse the green onion and trim the root end. Chop both the white and light green portions into small pieces.

  5. Cut the lime in half and squeeze the juice into a small bowl, straining out any seeds. Measure out 2 tablespoons of juice.

  6. Add the diced bell pepper, chopped green onion, and lime juice to the bowl with the mango. Gently fold all ingredients together until evenly combined. Taste and adjust seasonings if desired. Serve immediately or cover and refrigerate until ready to use.
