8 ounces lean ground beef

1 cup frozen lima beans, cooked and drained

1 3/4 cups low-sodium corn, drained

1 can (14.5 ounces) low-sodium diced tomatoes

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon ground nutmeg

Directions

  1. Thoroughly wash your hands with soap and warm water before beginning preparation.

  2. Heat a 9-inch skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned throughout and no longer pink in color (internal temperature of 160°F). This should take approximately 5-7 minutes.

  3. Carefully drain off any excess fat or liquid from the skillet, leaving the cooked beef behind.

  4. Stir the cooked lima beans, drained corn, drained tomatoes, salt, and black pepper into the beef. Mix well to combine all ingredients evenly.
