1 onion, quartered

10 cups water

Directions

  1. Place the pork butt cubes, halved garlic head, and quartered onion in a large pot. Add 10 cups of water and bring to a boil over high heat.

  2. Once boiling, reduce heat to low and simmer gently for about 90 minutes, stirring occasionally, until the pork is very tender and cooked through (internal temperature of 145F), skimming any foam that rises to the surface.

  3. Remove and discard the garlic halves and onion pieces. Stir in the drained and rinsed hominy.

  4. Add the dried oregano and cayenne pepper to the pot, stirring well to combine.

  5. Simmer for an additional 15 to 20 minutes to allow the flavors to meld and warm the hominy through.
