to taste Black pepper

Directions

  1. Slice the prepared cucumber halves diagonally into thin slices, about ½ to 1 centimeter thick.

  3. Arrange the salmon-wrapped cucumber twists on a serving plate in a single layer.

  4. In a small bowl, combine crème fraîche with a squeeze of fresh lemon juice and a pinch of sea salt, stirring until smooth.

  5. Top each cucumber twist with a small dollop of the lemon crème fraîche mixture.

  6. Finish with a sprinkle of freshly ground black pepper and a light dusting of lemon zest over each piece before serving.

This is a genuinely fast appetizer—15 minutes is honest—that works well for a crowd and costs under $1 per serving even with quality smoked salmon at Harris Teeter or Food Lion. The only caveat is crème fraîche, which is not a staple at ALDI or Walmart and may require a second stop at Harris Teeter or Kroger; sour cream is a weaker substitute and changes the bite. Cucumber and lemon are dependable year-round in Charlotte, and leftover twists hold for two days refrigerated, though they do soften slightly.
