Ingredients

1½ lbs Pork loin, trimmed and cut into 1-inch cubes

½ cup Extra-virgin olive oil

1 small Red onion, finely chopped

6 cloves Garlic cloves, minced

6 tablespoons Fresh lemon juice

2 tablespoons Red wine vinegar

2 teaspoons Dried Greek oregano

Black pepper

1 whole English cucumber, peeled and grated

2 cups Greek yogurt

Wooden skewers, soaked in water

10 whole Pita bread

Directions

  1. In a large bowl, combine 1/2 cup olive oil, finely chopped red onion, 2 minced garlic cloves, 4 tablespoons lemon juice, red wine vinegar, and oregano. Season generously with salt and pepper.

  2. Add the pork loin cubes to the marinade and toss until all pieces are well coated. Cover and refrigerate for at least 8 hours or overnight, stirring occasionally, for best flavor development.

  3. While the pork marinates, prepare the tzatziki sauce. Place the grated cucumber in a fine-mesh strainer and press gently to remove excess moisture. Transfer to a bowl.

  4. Add the Greek yogurt, 4 minced garlic cloves, 2 tablespoons lemon juice, and 2 tablespoons olive oil to the cucumber. Stir until well combined and season with salt and pepper to taste. Refrigerate until ready to serve.

  5. Preheat your grill to high heat (about 400°F). Remove the pork from the refrigerator 15 minutes before cooking to bring closer to room temperature.

  6. Thread the marinated pork cubes onto the soaked wooden skewers, leaving a small space between pieces to allow even cooking.

  7. Place the skewers directly on the grill grates. Cook for 10-12 minutes, turning every 3-4 minutes to ensure even charring and cooking on all sides. The pork is done when it reaches an internal temperature of 145°F at the thickest point.

  8. Warm the pita bread on the grill for 30 seconds per side, or warm in a dry skillet until soft and pliable.

  9. Transfer the cooked souvlaki skewers to a serving platter. Serve with warm pita bread and tzatziki sauce on the side, allowing guests to assemble their own wraps.
