Ingredients

1/2 watermelon, cut into bite-sized cubes

1/2 pound feta cheese, crumbled

2 cucumbers, diced

1 bunch fresh radishes, thinly sliced

1 bunch fresh mint, leaves torn

1/4 cup balsamic vinegar

Directions

  1. Cut the watermelon in half and remove the seeds. Cut the flesh into bite-sized cubes, discarding the rind, and place in a large bowl.

  2. Wash the cucumbers and dice them into 1/2-inch cubes. Add to the bowl with the watermelon.

  3. Wash the radishes and slice them thinly, preferably using a mandoline for uniform thickness. Add to the bowl.

  4. Crumble the feta cheese into bite-sized pieces and add to the salad.

  5. Tear the fresh mint leaves from their stems and scatter over the salad.

  6. Drizzle the balsamic vinegar evenly over the salad and gently toss all ingredients together until well combined. Serve immediately or chill until ready to serve.

All ingredients are standard stock at every major Charlotte chain—watermelon and cucumber are local staples, feta is widely available, and balsamic vinegar is basic pantry—so this requires zero detours. The stated 15 minutes is honest for chopping and tossing; cost per serving runs roughly $1.50–$2.00 depending on watermelon season, driven by the melon and feta rather than anything premium. It reheats poorly and is best eaten same-night, which limits weeknight leftovers. The recipe fits casual family meals and a summer cookout perfectly, but it's a straightforward no-cook salad with no technique or surprise, making it solid but unremarkable.
