Ingredients
3 large pita breads
1 tsp olive oil
salt to taste
1 tsp sweet paprika
1 cup Greek yogurt
1/3 continental cucumber, with peel, cut into small cubes
2–3 tbsp fresh mint, finely minced
1 clove garlic, finely minced
black pepper to taste
Directions
Preheat oven to 375°F.
Cut each pita bread in half, then cut each half into triangles to create chip-sized pieces.
Arrange the pita triangles in a single layer on a baking sheet.
Lightly brush or spray the pita triangles with olive oil on both sides.
Sprinkle the pita chips evenly with salt and sweet paprika.
Bake for 10–15 minutes until the chips are golden and crispy throughout.
Remove from oven and allow the chips to cool completely on the baking sheet before serving.
While the chips bake, prepare the dip: In a medium bowl, combine the Greek yogurt, minced cucumber, fresh mint, and minced garlic.
Season the yogurt dip with salt and black pepper to taste, stirring well to combine.
Transfer the cooled pita chips to a serving bowl and serve alongside the mint yogurt dip.
