Ingredients
1/4 teaspoon Creole seasoning
2 tablespoons cornstarch
1/4 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 cup packed light brown sugar
1/4 teaspoon freshly cracked black pepper
1 (6 ounce) can pineapple juice
3 pounds skinless chicken thighs
1/3 cup soy sauce
2 tablespoons water
Directions
In a small bowl, combine the Creole seasoning, garlic powder, kosher salt, and black pepper. Pat the chicken thighs dry with paper towels, then season both sides evenly with the spice mixture.
In the slow cooker, whisk together the brown sugar, pineapple juice, soy sauce, cornstarch, and water until well combined and the cornstarch is fully dissolved.
Arrange the seasoned chicken thighs in the slow cooker, nestling them into the liquid. Make sure the chicken is mostly submerged in the mixture.
Cover the slow cooker and cook on low for 5 to 6 hours, until the chicken is tender and reaches an internal temperature of 165°F when measured with a meat thermometer at the thickest part of the thigh.
Once the chicken reaches the safe internal temperature of 165°F, it is fully cooked. Transfer the chicken to a serving platter or individual plates.
Spoon the thickened sauce over the chicken and serve hot with your choice of sides such as rice, vegetables, or noodles.
