Ingredients
1 pound carrots, peeled and cut into ¾-inch thick diagonal pieces
2 teaspoons cooking oil or olive oil
1 tablespoon ponzu sauce
½ teaspoon roasted sesame oil
1 teaspoon sesame seeds
1 tablespoon chopped green onions
Directions
Preheat your oven to 375°F. Toss the carrot pieces with the cooking oil and spread them in a single layer on a baking sheet.
Roast for 15–18 minutes, stirring halfway through, until the carrots are tender with slightly crispy, caramelized edges.
While the carrots roast, whisk together the ponzu sauce and roasted sesame oil in a small bowl until well combined.
Remove the carrots from the oven and transfer to a serving dish. Pour the ponzu-sesame mixture over the hot carrots and toss gently to coat.
Sprinkle with sesame seeds and chopped green onions. Serve warm.
