1 loaf challah bread, sliced

Directions
Cut the bacon into small pieces and cook in a large skillet over medium-high heat until crispy, about 8–10 minutes. Transfer the cooked bacon to a paper towel-lined plate, reserving 2 tablespoons of the bacon fat in the skillet.
Add the finely chopped onion to the skillet with the bacon fat and sauté over medium heat until softened and translucent, approximately 5 minutes. Allow to cool slightly.
In a large mixing bowl, combine the ground beef, ground lamb, cooled onion, and cooked bacon. Gently mix until just combined, being careful not to overwork the mixture. Divide into 14 equal portions and shape each into a patty about 3/4 inch thick.
Season each patty generously with salt and black pepper on both sides. Heat the skillet over medium-high heat (you may need to add a bit of oil if the bacon fat has been mostly used). Cook the patties in batches for 3–4 minutes per side until they reach an internal temperature of 160°F on a meat thermometer.
Shred the Gruyère cheese and crumble the blue cheese. Combine them in a small bowl.
Slice the challah bread into 28 slices (two per burger) and lightly toast them in the skillet or a separate toaster until golden brown, about 2 minutes per side.
Assemble each burger: place a toasted challah slice as the bottom, top with one patty, sprinkle about 1/4 ounce of the combined cheese mixture over the hot patty, add a small handful of fresh arugula, and cap with a second toasted challah slice.
Serve immediately while the patties and bread are still warm.
