Ingredients

2 teaspoons brown miso paste

2 teaspoons grated fresh ginger

8 ounces Two 4-ounce salmon fillets

1 teaspoon sesame seeds

1 tablespoon sesame oil

1/2 red bell pepper, sliced

1 cup snow peas

2 garlic cloves, minced

Directions

  1. In a small bowl, combine the brown miso paste with the grated ginger to form a smooth paste. Set aside.

  2. Heat the sesame oil in a large skillet over medium-high heat.

  3. Once the oil is hot, carefully place the salmon fillets skin-side up in the skillet. Sear for about 4 minutes until the bottom develops a light golden crust.

  4. Flip the salmon fillets and immediately spread the miso-ginger paste evenly over the top of each fillet.

  5. Cook for another 3–4 minutes until the salmon reaches an internal temperature of 145°F and flakes easily with a fork. Transfer to a plate and tent with foil to keep warm.

  6. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

  7. Add the red bell pepper and snow peas to the skillet. Stir-fry for 3–4 minutes until the vegetables are tender-crisp but still bright in color.

  8. Divide the vegetables between two plates and top each with a miso-glazed salmon fillet. Sprinkle the sesame seeds over the top and serve immediately.
