Ingredients

½ cup buttermilk

4 cloves garlic, minced

1 tablespoon Cajun or blackening seasoning, salt-free

4 boneless, skinless chicken breasts

Kosher salt, to taste

Black pepper, to taste

Directions

  1. In a shallow bowl, whisk together the buttermilk, minced garlic, and Cajun seasoning until well combined.

  2. Pat the chicken breasts dry with paper towels and season both sides lightly with kosher salt and black pepper.

  3. Place the chicken breasts in a resealable bag or shallow dish and pour the buttermilk mixture over them, turning to coat evenly. Refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.

  5. Remove the chicken from the marinade, allowing excess liquid to drip off. Discard any remaining marinade.

  6. Place the chicken breasts on the preheated grill and cook for 6–8 minutes per side, until the internal temperature reaches 165°F at the thickest part of the meat.

  7. Transfer the grilled chicken to a cutting board and let rest for 3–5 minutes before serving.
