Ingredients

2 fresh mangoes

1 red Thai chili

3 Thai basil stalks

¼ medium red onion, diced

1 fresh lime juice

Directions

  1. Wash the mangoes thoroughly under running water. Cut each mango in half lengthwise, working around the large flat pit in the center. Score the flesh in a crosshatch pattern without piercing the skin, then scoop the cubes into a medium bowl.

  2. Slice the red Thai chili very thinly using a sharp knife, removing the seeds if you prefer less heat. Add the sliced chili to the mango.

  3. Roughly chop the Thai basil leaves, discarding the tough outer stems. Stir the basil into the mango mixture.

  4. Dice the quarter section of red onion into small, uniform pieces and add to the bowl.

  5. Squeeze the fresh lime juice directly over the mixture, stirring gently to combine all ingredients.

  6. Season with salt to taste, stirring well. Allow the salsa to rest for 10–15 minutes at room temperature before serving to let the flavors meld.
