Ingredients

1/2 small seedless watermelon, cut into cubes

1/2 cup crumbled feta cheese

1/4 cup reduced balsamic vinegar

Directions

  1. Cut the seedless watermelon in half and remove the flesh from the rind. Cut the watermelon flesh into bite-sized cubes, removing any remaining seeds.

  2. Place the watermelon cubes in a large serving bowl.

  3. Sprinkle the crumbled feta cheese evenly over the watermelon cubes.

  4. Drizzle the reduced balsamic vinegar over the top of the salad.

  5. Gently toss the ingredients together until the feta and balsamic are distributed throughout. Serve immediately or chill until ready to serve.

Watermelon and feta are both available year-round at every Charlotte chain, though watermelon peaks June through August when local North Carolina melons hit stores at rock-bottom prices; balsamic vinegar is standard pantry stock. The 10-minute claim is honest—cubing watermelon and crumbling feta takes exactly that—but the real cost driver is feta, which runs $8–12 per pound at Harris Teeter or Food Lion, making this hit $3–4 per serving even with cheap watermelon. This is a no-cook side that does not reheat well (feta weeps, watermelon softens), so it's a same-night summer dish, and it's fussy enough to feel special without actual cooking skill, though the flavor payoff depends entirely on good-quality feta and not overdoing the vinegar.
