Ingredients
1 small avocado, sliced thin
4 spicy black bean burger patties
4 tablespoons blue cheese crumbles
2 cups pre-made coleslaw mix
1 tablespoon honey
2 tablespoons plain Greek yogurt
1 ounce reduced-fat cream cheese
Pinch of sea salt and black pepper
4 whole wheat burger buns
Directions
In a small bowl, combine the coleslaw mix, blue cheese crumbles, Greek yogurt, cream cheese, and honey. Stir until all ingredients are evenly incorporated.
Season the coleslaw mixture with a pinch of sea salt and black pepper to taste. Mix gently and set aside. This can be made ahead and refrigerated if desired.
Cook the spicy black bean burger patties according to package instructions. Grilling or pan-frying over medium heat until heated through works best, typically 4–5 minutes per side.
While the burgers cook, lightly toast the whole wheat buns until golden and warm, about 1–2 minutes per side.
To assemble each burger, place one cooked patty on the bottom bun. Top with a generous portion of the blue cheese coleslaw, followed by 2–3 slices of fresh avocado.
Place the top bun on each burger and serve immediately while warm.
