Ingredients

1 smoked ham hock, about 500g (1 lb 2 oz)

2 tbsp vegetable oil

1 large onion, diced

2 celery sticks, diced

1 red pepper, diced

1 green pepper, diced

200g (7 oz) butternut squash, peeled and diced

1 large courgette, trimmed and diced

2 garlic cloves, crushed

a few sprigs fresh tarragon, leaves picked

250g (9 oz) sweetcorn (frozen or fresh)

400g tin butter beans, drained and rinsed

Directions

  1. Place the smoked ham hock in a large pot and cover completely with cold water. Bring to a boil, then carefully pour off the water (this removes excess salt). Rinse the hock if desired, return it to the pot, and cover again with fresh water. Bring back to a boil, reduce heat to low, and simmer gently for about 2 hours until the meat is very tender and shreds easily from the bone. Strain the cooking liquid into a bowl, reserving it for later. Allow the ham to cool slightly, then remove and discard the rind, bone, and any gristle. Pull the meat into thick, rustic shreds and set aside.

  2. Heat the vegetable oil in a large casserole or heavy-bottomed pot over medium heat. Add the diced onion, celery, red pepper, green pepper, butternut squash, and courgette. Cook, stirring occasionally, for about 5 minutes until the vegetables begin to soften around the edges.

  3. Stir in the crushed garlic and tarragon leaves, cooking for another minute until fragrant. Add the sweetcorn and drained butter beans, stirring well to combine.

  4. Add the shredded ham meat to the pot along with enough of the reserved cooking liquid to almost cover the mixture (you may not need all of it). Bring to a gentle simmer and cook for 8–10 minutes until the vegetables are just tender and the liquid has reduced slightly. Taste and adjust seasoning as needed before serving.
