Ingredients

1 whole chicken, cut into pieces

2 tablespoons vinegar

1 piece fresh ginger

4 cloves garlic

1 tablespoon tomato paste

Directions

  1. Clean the chicken pieces thoroughly under running water. In a large pot, bring water to a boil and add the vinegar. Add the chicken pieces and simmer over medium heat for approximately 20 minutes until the chicken is tender and cooked through to an internal temperature of 165°F. Drain and set aside.

  2. While the chicken is cooking, finely mince or grind the fresh ginger and garlic cloves together until a fine paste forms.

  3. Once the chicken is tender and has been drained, transfer it to a bowl. Add the ginger-garlic paste, salt to taste, and tomato paste. Toss the chicken pieces to coat evenly with the marinade.

  4. Let the marinated chicken rest for approximately 15 minutes at room temperature, allowing the flavors to infuse into the meat.

  5. Preheat your oven to 180°C (350°F). Arrange the marinated chicken pieces in a single layer on a baking tray.

  6. Place the tray in the preheated oven and grill the chicken for approximately 45 minutes, turning the pieces halfway through cooking, until the exterior is nicely caramelized and charred.

  7. Remove from the oven and serve the grilled chicken hot, optionally with fresh chilly kachumbari and ugali on the side.
