Ingredients
1 small onion, chopped
2 teaspoons vegetable oil
2 cups refried beans
8 taco shells or flour tortillas
1/4 head of lettuce, chopped
2 medium tomatoes, chopped
1 cup shredded cheddar cheese
Taco sauce to taste (optional)
Directions
Wash your hands thoroughly with soap and warm water before beginning preparation.
Heat the vegetable oil in a medium skillet over medium heat for about 1 minute until shimmering.
Add the chopped onion to the hot oil and cook, stirring occasionally, until softened and translucent, about 4-5 minutes.
Pour the refried beans into the skillet with the cooked onion and stir to combine thoroughly.
Continue heating the bean mixture over medium heat, stirring frequently, until it is heated through completely, about 4-5 minutes.
Warm the taco shells or tortillas according to package directions, or warm them in a dry skillet for 30 seconds per side.
Spoon the warm refried bean mixture evenly into each taco shell or spread it onto each tortilla.
Top each taco with shredded cheddar cheese, chopped lettuce, and chopped tomatoes.
Drizzle with taco sauce if desired. Serve immediately while warm.
