A classic Spanish potato and egg skillet, also known as Spanish tortilla. Thinly sliced potatoes and onions are gently cooked in olive oil until tender, then combined with beaten eggs and cooked until set. The result is a golden, savory dish that works equally well for breakfast, lunch, or dinner. Serve it warm or at room temperature, sliced into wedges.

Ingredients
6 eggs, beaten
2 Yukon Gold potatoes, peeled and thinly sliced
2 to 3 green onions, chopped (using the light green and white parts)
1/4 cup extra virgin olive oil
Salt to taste
Directions
Peel the Yukon Gold potatoes and slice them into thin, even rounds (about 1/8 inch thick). Pat them dry with paper towels to remove excess moisture.
Heat the olive oil in an 8 to 10-inch nonstick or cast-iron skillet over medium heat. Once hot, add the sliced potatoes in an even layer, stirring occasionally, for about 8 to 10 minutes until they begin to soften and release their starches.
Add the chopped green onions to the skillet and stir gently. Continue cooking for another 2 to 3 minutes until the potatoes are fully tender but not breaking apart, and the onions are fragrant. Season the mixture with salt.
While the potatoes cook, beat the eggs in a bowl with a pinch of salt until well combined. Once the potatoes are tender, pour the beaten eggs evenly over them, gently stirring to distribute the potatoes throughout.
Reduce the heat to medium-low and allow the tortilla to cook undisturbed for 10 to 12 minutes. The edges will set first while the center remains slightly wet. Cook until the center registers 160°F on an instant-read thermometer, indicating the eggs are fully cooked through.
Remove the skillet from heat. Let the tortilla rest for 1 to 2 minutes, then carefully run a spatula around the edges to loosen it. Slide it onto a cutting board or serving plate and allow it to cool for a few minutes.
Cut the tortilla into 4 wedges and serve warm, at room temperature, or even chilled. Serve as a main course or appetizer with bread on the side.
