Ingredients

1½ cup all purpose flour

¾ cup apple cider

1 tsp baking powder

½ tsp baking soda

1¼ tsp ground cinnamon

1 large egg

¾ cup granulated sugar

½ cup light brown sugar

¼ tsp ground nutmeg

¼ tsp salt

7 Tbsp unsalted butter, melted

½ tsp vanilla extract

Directions

  1. Preheat your oven to 350°F. Grease a standard muffin pan with non-stick cooking spray or butter and set aside. In a medium bowl, whisk together the apple cider, egg, and vanilla extract until well combined.

  2. In a large bowl, combine the flour, 3/4 cup of granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix these dry ingredients together thoroughly.

  3. Pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Do not overmix—small lumps are fine. The batter should come together with no streaks of flour remaining.

  4. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Use a large cookie scoop for even portions.

  5. Bake for 15 to 18 minutes, until a toothpick inserted into the center of a muffin comes out clean. Do not overbake.

  6. As soon as the muffins come out of the oven, turn them out onto a clean baking sheet or cutting board while still warm.

  7. Pour the melted butter into a medium bowl. In a separate medium bowl, combine the remaining 1/4 cup granulated sugar with an additional 1/4 teaspoon of cinnamon.

  8. Dip each warm muffin entirely in the melted butter, then roll it in the cinnamon-sugar mixture until well coated on all sides.

  9. Place the coated muffins on a wire cooling rack positioned over a baking sheet to cool completely before serving.
