3 medium bananas, mashed

1 large egg

1/2 cup applesauce

1/3 cup sugar

1/2 cup whole wheat flour

1/2 cup all-purpose flour

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1/8 teaspoon salt

1/8 teaspoon cinnamon

1 cup fresh blueberries

1/2 cup chocolate chunks

Directions

  1. Preheat your oven to 375°F. Line a 6-cup muffin pan with paper muffin liners.

  2. In a large mixing bowl, combine the mashed bananas, egg, applesauce, and sugar. Stir until well blended.

  3. In a separate medium bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.

  4. Pour the wet banana mixture into the dry ingredients and gently stir until just combined; do not overmix. The batter should be slightly lumpy.

  5. Fold in the blueberries and chocolate chunks until evenly distributed throughout the batter.

  6. Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.

  7. Bake for 20 to 23 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs.

  8. Allow the muffins to cool in the pan for 5 minutes, then turn out onto a wire rack. Serve warm.
