2½ teaspoons instant yeast
1¼ cups lukewarm water
1 tablespoon sugar
2½ cups bread flour
1 teaspoon salt
1 tablespoon olive oil
Directions
In a small bowl, combine the lukewarm water, sugar, and instant yeast. Stir gently and let the mixture sit for about 5 minutes until foamy, indicating the yeast is active.
In a large mixing bowl, whisk together the bread flour and salt. Create a well in the center of the flour mixture.
Pour the activated yeast mixture and olive oil into the well. Mix with a wooden spoon or your hands until a shaggy dough forms.
Transfer the dough to a lightly floured work surface and knead for 8 to 10 minutes, until the dough becomes smooth and elastic. Add small amounts of flour as needed if the dough is too sticky.
Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 1 to 1.5 hours, until doubled in size.
Punch down the dough and divide it into 6 equal pieces. Roll each piece into a smooth, round ball.
On a parchment-lined baking sheet, arrange the dough balls in a curved caterpillar shape, with each ball slightly overlapping the next, creating a body. Position one ball at the end to form the head.
Cover the shaped bread loosely with plastic wrap and let it rise in a warm place for 45 minutes to 1 hour, until the rolls have puffed and are nearly touching.
Preheat your oven to 375°F (190°C). Uncover the caterpillar bread and bake for 20 to 25 minutes, until the top is golden brown and the bread sounds hollow when tapped.
Remove the bread from the oven and let it cool on the baking sheet for a few minutes, then transfer to a wire rack. Once cooled slightly, decorate the head with raisins for eyes or other toppings as desired for a festive Halloween presentation.
