1 tablespoon instant coffee

3 tablespoons cold water

sugar (optional)

ice cubes

1 cup cold water for serving

evaporated milk (optional)

Directions

  1. Pour the instant coffee and 3 tablespoons of cold water into a tall glass.

  2. Add sugar to taste if desired, starting with 1 teaspoon.

  3. Use a fork or small whisk to vigorously beat the mixture for 2–3 minutes until it becomes thick, light, and foamy with a creamy texture on top.

  4. Fill another glass with ice cubes and add 1 cup of cold water.

  5. Spoon the coffee foam into the glass with ice and water.

  6. Stir well to combine, or leave the foam on top for a visual effect. Add evaporated milk to taste if desired.

  7. Serve immediately with a spoon for scooping the foam.

A frappé hits perfectly for a Charlotte summer and costs under a dollar to make at home versus $6 at a coffee shop. Every ingredient is a staple at every major chain in town—instant coffee, sugar, evaporated milk, and ice are nonnegotiable pantry items. The five minutes is honest: instant coffee dissolves in seconds, the milk foams in a blender in under a minute, and there's no real prep. It's a single-serve drink that reheats poorly but doesn't need to, since you drink it cold and fast; the only catch is if your blender is loud enough to annoy housemates at breakfast, and the foam collapses within an hour if you're not drinking it right away.
