3 Ways with Scrambled Eggs

Ingredients
2-3 free-range eggs
Small knob of butter
Salt and pepper to taste
1 tablespoon finely chopped fresh chives
1 tablespoon crème fraîche
Small handful grated Parmesan, Cheddar, or crumbled feta cheese (choose one)
½ red chilli, finely chopped
50g smoked salmon, roughly chopped
Directions
Crack the eggs into a bowl and whisk together with salt and pepper until well combined.
Heat a non-stick frying pan over medium heat and add the butter, allowing it to melt and coat the base of the pan.
Pour the whisked eggs into the hot buttered pan.
CLASSIC VERSION: Immediately sprinkle the chives over the eggs. Gently push the cooked portions from the edges towards the center using a spatula, allowing uncooked egg to flow to the edges. Cook for 3-4 minutes until just set but still creamy. Stir in the crème fraîche and serve immediately.
CHILLI & CHEESE VERSION: Scatter the chopped red chilli over the eggs immediately. Gently push the cooked portions from the edges towards the center. When the eggs are about halfway cooked (after approximately 1-2 minutes), sprinkle the cheese over the top and continue stirring gently until the eggs are just set but still creamy, about 1-2 minutes more. Serve immediately.
SMOKED SALMON VERSION: Whisk the crème fraîche into the eggs before cooking. Pour the mixture into the prepared pan and immediately add the chives. Gently push the cooked portions from the edges towards the center. When the eggs are about halfway cooked (after approximately 1-2 minutes), add the smoked salmon and continue stirring gently until the eggs are just set but still creamy, about 1-2 minutes more. Serve immediately.
